Just when you think you can’t improve a good pumpkin soup.. this version hit with our original hot honey may just convince you otherwise!
Sweet, spicy, creamy and scary good with a round of buttered toast on a cold Halloween night 🎃
Recipe (Serves 4)
Ingredients
1 small pumpkin, or squash peeled & cubed
1 onion, chopped
2 garlic cloves
1L vegetable stock
3 tbsp WilderBee Original Hot Honey
Olive oil
Butter
50ml double cream
2 tbsp toasted pumpkin seeds
8 sage leaves
Method
Toast the pumpkin seeds in a pan over a medium heat then set aside
Roast the pumpkin, onion & garlic with oil until caramelised.
Blend with hot stock until smooth.
Gently fry the sage leaves in butter until crisp
Ladle the soup into bowls. Swirl in cream and Hot Honey.
Finish with toasted seeds and fried sage leaves.
