Bored of bacon baps? This take on breakfast smash tacos - with a nod to arguably the worlds best sandwich - will take your breakfast game to legendary levels.
Makes: 4 tacos
Ingredients:
The meat from 4 Pork sausages, removed from skins
4 good eggs
4 small soft tortillas
1 small carrot (julienned)
1/2 cucumber (sliced into ribbons)
2 tbsp mayo (Kewpie if you can get it but standard will do it)
1 tbsp rice vinegar
1 tsp salt
1 tsp sugar
WilderBee Sriracha Hot Honey (for finishing)
Fresh coriander
Method:
1) Combine the salt, sugar and vinegar until dissolved and pour over the carrot and cucumber for a quick pickle. Set aside
2) Spread the sausage meat evenly over the tortillas
3) Smash meat side down flat directly into a hot pan and cook until crisp.
4) Fry the eggs in a separate pan until crispy on the underside so they are ready for the build at the same time
5) Serve with egg, pickled veg and coriander and finish with the mayo and good drizzle of WilderBee Sriracha Hot Honey.
