If you’re looking for a side dish that gives off main character energy, then these hot honey & whipped feta carrots are THE ONE!
Serves: 2-4 (side dish)
Ingredients:
400g carrots (halved lengthways)
2 tbsp light olive oil
20g salted butter
WilderBee Original Hot Honey (for finishing)
100g feta cheese
2 tbsp Greek yoghurt
1/2 garlic clove (grated)
Zest of 1 lemon
Fresh thyme (picked)
Method:
Preheat the oven to 200°C (fan 180°C).
Toss carrots in oil and roast 25-30 mins until caramelised.
Blitz feta, yoghurt, lemon zest and garlic until smooth.
Spread whipped feta onto a serving plate.
Toss the carrots in butter and hot honey
Top the whipped feta with the carrots, pour over the remaining hot honey butter, sprinkle over the thyme leaves and serve
